Henri Gault

Henri Gault was a French food journalist and critic who co-founded the influential GaultMillau restaurant guide in 1969 with Christian Millau, rivaling the Michelin guide in popularity. He played a pivotal role in promoting nouvelle cuisine, coining the term in a 1972 article and emphasizing lightness, fresh ingredients, and creative presentation in cooking. Gault authored notable works such as 'Gault and Millau Eat Dinner' and 'My 50 Best Restaurants in France' before his death from a heart attack in 2000 at age 70.
